1. Respect the Two-Hour Rule
Cooked food left at room temperature for over two hours enters the bacterial danger zone. In Indian summers, cut that to one hour.
2. Keep Dairy Cold, Always
Milk, yogurt and paneer belong in the fridge within minutes of use — not on the counter. Dairy spoilage often begins before smell or taste reveals it.
3. Separate Raw and Cooked
Use different chopping boards for raw meats and vegetables. Cross-contamination is the most common cause of home food illness.
4. Wash Hands Like It Matters
Twenty seconds with soap before cooking and after handling raw ingredients. It's the cheapest food safety tool that exists.
5. Reheat Fully, Once
Leftovers should be reheated until piping hot — and only once. Repeated reheating cycles multiply bacterial risk.
6. Check Your Fridge Temperature
Your refrigerator should run at or below 4°C. A cheap fridge thermometer removes the guesswork.
7. FIFO: First In, First Out
Arrange groceries so older items sit in front. Professional kitchens live by this rule — it eliminates forgotten, expired food.
8. Thaw in the Fridge, Not the Counter
Frozen food thawed at room temperature grows bacteria on the outside while the inside remains frozen.
9. Trust Dates, and Your Senses
Expiry dates matter — but so does inspection. If dairy looks curdled, smells sour or tastes off before its date, discard it.
10. Clean As You Go
Wiping surfaces during cooking, not just after, prevents the spread of spills and residues that attract contamination.
